Dry ice is solid carbon dioxide, which is obtained by condensing carbon dioxide into a colorless liquid at a pressure of 6250.5498 kPa and then rapidly solidifying it under low pressure.

Characteristics: Carbon dioxide is invisible. In fact, it is not (carbon dioxide) smoke, but (water) fog. When carbon dioxide changes from solid to gas, it absorbs a large amount of heat, causing the temperature of the surrounding air to drop rapidly. When the air temperature drops, its solubility in water vapor decreases. The water vapor undergoes a liquefaction reaction, releasing heat and turning into small droplets, which is fog. This is the same as the "white mist" that comes out of popsicles in the summer. They are all small water droplets, not other gaseous substances.

Edible dry ice has been widely used in the catering industry, providing more diverse choices for people's diet. However, some precautions should be taken when using edible dry ice.

??It is forbidden to touch edible dry ice with your hands or eat it because it may cause frostbite, so it should be wrapped with cloth or newspaper before handling.

??The temperature and time can be adjusted after wrapping with newspapers. Please wrap the dry ice with cloth or newspapers. In this way, the sublimation rate of dry ice itself will be inhibited, thereby extending the cooling time.

??It is forbidden to seal edible dry ice in bottles and other containers. When dry ice turns into gas, its volume will increase 750 times. Putting it in a sealed container may cause the container to burst.

??Be careful of lack of oxygen in places where large amounts of dry ice are placed. When using large amounts of dry ice in a closed room, be sure to ventilate frequently.

??Fresh fish, vegetables, fruits and melons should be stored in plastic bags. Fresh fish, vegetables, fruits and melons should be placed in plastic bags for indirect cooling to keep them fresh for a long time.
