I don't know if you have ever eaten snake meat. The taste of snake meat is different from the meat we usually eat. In comparison, snake meat is smoother and more tender, and has a better taste. Snake meat has a very nourishing effect. Some people will break out in sweat after eating it. Snake skin is also edible. Unlike snake meat, snake skin tastes more chewy. It itself also has good medicinal value. So how do you make snake skin delicious?

1. Snake skin soup

Materials

Appropriate amount of meat

Snake skin 400g

6 pieces of Angelica

2 Codonopsis pilosula

Chives

Sour radish cubes

Salt to taste

Chicken powder

Sesame oil

Snake skin soup recipe

1. After buying the snake skin, clean it, blanch it in boiling water, pick it up and scrape off the scales. This step is the most annoying and also the most critical. If the snake skin is boiled for too long, the scales will easily rot; if it is not boiled for enough time, the scales will be difficult to scrape off. It takes about 1 minute, depending on the skin of the snake.

2. Soak angelica, codonopsis and yuanrou in water to remove the dirt on the surface. Chop the chives and set aside the pickled radish.

3. Put the ingredients in the second step into the pot and cook. Increase or decrease the amount of water in the pot according to the actual number of people. Cook for about half an hour until the ingredients are basically flavored. Add the snake skin and cook for ten to fifteen minutes. Add salt, chicken powder and sesame oil to season.

4. Put an appropriate amount of leeks at the bottom of the bowl, pour the snake skin soup into the bowl while it is still hot, and finally put a few pickled radishes on it, and you are done.

2. Cold snake skin

Materials

1 cucumber; 2 tablespoons soy sauce; 2 tablespoons oyster sauce; 1 clove of garlic

How to make cold snake skin

Cut the cucumber into strips, chop the pepper, wash the snake skin and boil it for 15 minutes

Mix cucumber shreds with soy sauce, add pepper and garlic paste, oyster sauce, soy sauce and stir well.

3. Flavor Snake

Materials

750g snake; 450g chili pepper; appropriate amount of ginger and garlic; appropriate amount of star anise, cinnamon and bay leaves

Go to the nearby market and buy a snake. It doesn’t have to be too big, more than two kilograms is best.

Ask the store to help process the snake skin and meat and keep the liver.

1. First, wash the snake skin with clean water, cut it into sections and put it into the pressure cooker

(If you don’t have a pressure cooker, you can use a purple clay pot, add ginger slices to remove the fishy smell, then put the meat in when the water is cold, boil the water, and simmer on low heat for 15-20 minutes)

Note: Snake skin should also be put into the pot

2. Chop the garlic and ginger and set aside

3. Heat the wok over high heat until dry, add cold oil, star anise, cinnamon, bay leaves, chili pepper and chili sauce, and sauté until red oil comes out.

(More oil should make the chili appear saturated.)

4. Pour the cooked snake meat and snake skin into the pot and fry it for a while. Then add light soy sauce and dark soy sauce and stir-fry until the snake meat changes color.

(Pour in the broth and simmer over low heat for about 5-10 minutes)

5. Add red fresh peppers, millet peppers, and fruit peppers, add oyster sauce, turn up the heat to thicken the sauce, and add some chicken essence!
