Why is the taste getting stronger

Modern people's taste has undergone some wonderful changes. According to some real survey data, it can be found that modern people's taste has become heavier. Compared with a light diet, most of the time we can only have a good appetite when we eat a diet high in oil and salt. In our diet, more and more salt, MSG, chicken essence and other seasonings are added. The main reasons why our appetite is getting heavier are as follows.

First, eating out too frequently. Thirty years ago, "going to a restaurant" was a treat only available during grand festivals, but for many people today, restaurants have become the "first canteen." Although it saves the trouble of cooking, many people feel that it is "too greasy and too salty". It is said that "a good cook needs a handful of salt". When discussing the "salt limit in Sichuan cuisine", some chefs even said that they don't know how to cook dishes with less salt and oil, and even if they do, no one will like them.

Second, the ingredients are bland and can only be improved by seasoning. Surveys show that today's fruits, vegetables and meat are bland compared to before. Chicken is not fresh, meat is not fragrant and vegetables are not sweet. They have to rely on a lot of seasonings to enhance the flavor. However, seasonings are not like natural foods, which have different flavors for each dish. The flavors are mostly sweet, salty, sour and spicy. If you eat too much, you will get tired of it and can only relieve the boredom by adding stronger flavors.

Third, stress can dull your sense of taste. Wang Yi, director of the Diet Therapy and Nutrition Department of Guang'anmen Hospital of the China Academy of Chinese Medical Sciences, told reporters that in addition to geographical factors, the fast-paced life is also changing people's taste buds. The tension caused by excessive stress can dull the sense of taste and cause the taste buds to "degenerate". When people complain that many foods are "tasteless", the pursuit of stimulating flavors becomes inevitable, and the degree of stimulation is constantly escalating.

Fourth, high-tech condiments are also to blame. When you walk into a supermarket, you will see a wide variety of flavor enhancers and condiments. Wang Yi believes that even if one’s cooking skills are not very good, one can still make delicious meals with these, but this will just cover up the taste of the food itself. “The taste is fresh, but the deliciousness of the food itself is gone.”
