1. Kill a Mekong fish, clean it, cut a few times on the meat, add appropriate amount of chopped vegetables, cooking wine, pepper, salt and MSG and marinate for 10 minutes, then put it into the baking tongs and bake it in the UFO oven for 8 minutes. After taking it out, put it in the oven with onion shreds.

2. Heat 50 grams of scallion oil in a pan, add 400 grams of onion slices and 50 grams of garlic and stir-fry until fragrant, add 200 grams of scallion juice and 200 grams of fish soup and boil, add a little salt and MSG, remove from the pan and pour it on the grilled fish.

When making the spicy sauce, in addition to the common chili peppers, peppercorns, Pixian bean paste, star anise, bay leaves, cinnamon, etc., Lin Dixian also added several unique spices: licorice, yellow gardenia, thyme, and herb. Licorice has a sweet taste and is a natural sweetener. It also has the effect of promoting salivation and soothing the stomach. Yellow gardenia can appear a golden red color when added to cooking, making the cooked sauce bright red and natural, and more appetizing.

Pour the prepared spicy sauce over it.
