How to handle live shrimp?

How to handle live shrimp before cooking :

Step 1 : Cut off the shrimp head at a 45-degree angle, starting from the shrimp brain downwards.

Step 2 : Use scissors to pick out the shrimp brain. Right next to the front of the shrimp brain is the shrimp roe, which is a good thing. If there is shrimp roe, be careful when picking it and try to keep it.

Step 3 : Gently pull out the shrimp brain, and part of the shrimp intestine will be pulled out.

Step 4 : Cut off the shrimp tail, leaving a little meat at the tail when cutting, because there may be a sphincter here, and if you don’t cut more, the shrimp intestine cannot be squeezed out.

Step 5 : Squeeze the shrimp intestines. Pinch the shrimp's back with your index finger and thumb, and push towards the tail, and the shrimp intestines will come out.

Step 6 : After a final clean, you can cook the shrimp.

Fresh shrimps are alive and kicking when you buy them, but when you get home and put them in water, only 1/3 of them are alive.

Prepare a toothpick to pick out the shrimp thread. Use a toothpick to pass through the shrimp body at the third joint counting down from the connection between the shrimp head and the shrimp body (the connection between the shrimp head and the shrimp body counts as one joint). Hold the shrimp in one hand and use the toothpick in the other hand to gently pick out the shrimp thread. Generally, the shrimp thread close to the shrimp head will be picked out first. Slowly pull the shrimp line with your hands, and the end of the shrimp line near the tail will be pulled out completely.

There is a super sharp thorn in the middle of the top of the shrimp head. Be sure to cut it off, otherwise you may hurt your hands or mouth. Use a toothpick to pierce the junction between the shrimp head and the body. Open the water pipe slightly and use a toothpick to pick and rinse the black tissue on the head. Some internal organs are concentrated here, as well as the sandbag, which is also a relatively dirty area. Compare the unprocessed shrimp and the initially processed shrimp. There are a total of 5 steps in the processing: cut off the shrimp's long whiskers, shrimp bones, shrimp legs, pick out the shrimp thread, and clean the head and internal organs. The second method: remove the shrimp head and shell, leaving the shrimp tail, cut both sides along the back of the shrimp, use your hands to open the shrimp back, can you see the shrimp intestines?
