Learn the four steps to master the method of making sesame oil

Almost every household has sesame oil. Using sesame oil as a seasoning can enhance the color, aroma and flavor of dishes. The production process of sesame oil is very traditional. High-quality sesame oil first requires high-quality sesame seeds, which are then carefully processed through multiple classic procedures. If you have a grinder or a traditional stone mill at home, you can try to grind sesame oil yourself according to the traditional sesame oil method.

1. Sesame rinsing operation procedures

1. First, pour the sesame seeds into the seed washing pot, add enough water to soak the sesame seeds 10cm high, then use a colander to stir the sesame seeds back and forth to allow the soil and stone impurities to hydrate and settle.

2. After soaking for 10 minutes, take out the sesame seeds and place them in a bamboo basket to drain the water.

3. Be careful not to put stones and other debris into the bamboo basket when scooping out, and clean the sesame seeds at the bottom of the pot to prevent the remaining sesame seeds from sprouting.

4. In spring and summer, because the room temperature is too high, the sesame seeds cannot be kept overnight to prevent them from sprouting and affecting the oil yield.

5. If conditions permit, you can use an air sieve to remove leaves and other impurities before scooping.

2. Sesame frying operation procedures

1. First, let the wok idle for 1 minute and check whether there is any noise from the motor. After making sure there is no abnormality, you can turn on the heating system and preheat for 10 minutes before putting the scooped sesame seeds into the wok.

2. Be sure to use high heat at the beginning. After the sesame seeds turn yellow, cook for 20 minutes. Then switch to low heat.

3. The best grinding temperature of the stone mill is when it turns purple-red. This is what we often say, "I would rather have the fragrance of sesame oil, but brown sugar inside and frosting outside."

4. When the heat reaches the right level, pour 2 and a half scoops of water into the wok to cool it down so that the temperature does not rise any further.

5. Put the roasted sesame seeds into the vibrating screen for screening, cooling, smoke removal, dust removal, etc.

6. Put the processed cooked sesame seeds in a winnowing basket and transfer them to the grinding room.

3. Sesame Grinding Operating Procedures

1. First check whether the hopper is properly placed. Only when there is nothing on the millstone can you load materials and start the millstone.

2. To adjust the coarseness of the stone mill, insert bamboo sticks into the grinding hole. If it is too fast, insert more bamboo sticks, otherwise insert fewer bamboo sticks.

3. The hopper must be equipped with a magnet and checked every shift for iron blocks and other debris.

4. Regularly check the lubricating oil, belts, etc. added to the differential.

5. Be careful when adding sesame seeds to prevent the stone mill from rotating and injuring your body.

6. Before leaving get off work, the sesame seeds in the hopper must be pushed clean to prevent moisture absorption.

4. Oil extraction operation procedures

1. Start the motor and stir the oil residue mixture in the pot for 2 minutes.

2. First add 70% of the total water volume of boiling water (90-98℃), stir quickly and manually for 20 minutes.

3. Add water for the second time, with the total water volume about 20%. After stirring for 15 minutes, oil will come out.

4. Add about 10% of the total water. This time you must be careful and do not add more blindly, otherwise no oil will be produced.

5. The total water content is generally 75 to 85 kilograms per 100 kilograms of sesame, depending on the origin of the sesame.

6. After stirring, put down the stirring fork and hang the gourd to beat it. Note that it should be turbid at first and then shallow, which will take about 3 hours.

7. After skimming the oil, the oil residue should be cleaned up in time to avoid spoilage and taste change.
