First, the brewing process of Maotai-flavor liquor is special, which is very different from other types of liquor. It takes at least five years for a bottle of Maotai-flavor liquor to go from the time the raw materials enter the factory to the time the product leaves the factory. During this process, the materials are added in two steps, the wine is steamed nine times, and spread out to dry eight times. In addition, koji is added in each round, the wine is piled up at high temperature, and fermented in a pool. Under the joint action of the microbial communities in the cellar and the air, all kinds of beneficial microorganisms are collected in the wine body. Second, there are fewer volatile substances in Maotai liquor. When distilling Maotai, the temperature of the liquor is as high as over 40 degrees, which is nearly twice as high as the temperature of other liquors. Under high temperature, more volatile substances will naturally evaporate, and the Maotai liquor must be stored for more than three years before it can be blended. The storage loss is as high as more than 2%. A large part of the volatile substances in the air has already evaporated, so fewer volatile substances are preserved in the wine. Nature has less stimulation to the human body and is beneficial to health. Third, the acidity of Maotai is high, 3 to 5 times that of other wines, and is mainly composed of acetic acid and lactic acid. According to traditional Chinese medicine theory, sourness benefits the spleen and stomach, protects the liver, and can soften blood vessels. Western medicine also believes that eating acidic foods is good for health. Fourth, Maotai contains a lot of phenolic compounds. In recent years, more and more consumers tend to choose dry red wine because dry red wine contains more phenolic compounds, which is beneficial in preventing cardiovascular diseases. The phenolic compounds in Maotai liquor are 3 to 4 times that of other famous and high-quality liquors. It can be seen that Maotai liquor and dry red wine have the same effect. 5. The alcohol concentration of Maotai liquor is scientific and reasonable. The liquor concentration of Maotai is generally 53%, and when the alcohol concentration is 53 degrees, the water molecules and alcohol molecules are most firmly bound. In addition, the storage period of Maotai liquor is longer and there are fewer free alcohol molecules, so it has less stimulation to the body and is beneficial to health. 6. Maotai is a natural fermentation product. Since the main flavor substance of this wine has not been found so far, even if someone wants to fake it by adding synthetic agents, they can't do it. This eliminates the possibility of adding any aroma or flavor substances. 7. According to relevant expert research, substances such as SOD and metallothionein exist in sauce-flavored liquor. Among them, SOD is a specific scavenger of oxygen free radicals. Its main function is to remove excess free radicals in the body, and its anti-aging effect is obvious. At the same time, Maotai liquor can induce the liver to produce metallothionein, and the efficacy of metallothionein is much stronger than SOD. Metallothionein has an inhibitory effect on the liver's star cells, making it difficult for cirrhosis to form. These are also the reasons why Moutai dared to claim in the past that "Moutai is the national liquor, drink it to get healthy." We cannot say that wine is very good, and accidents caused by alcoholism are not uncommon in daily life, but drinking a small amount of alcohol is still very good for our body. In fact, no matter what food, it has its opposite.
