Before you prepare to open the shrimp's back, rinse it under running water and drain. Then prepare a pair of sharp scissors and you can start.

1. First, use scissors to cut off the shrimp tail, then cut off 2/3 at the junction of the shrimp head and the shrimp body, leaving 1/3 connecting the shrimp head and the shrimp body.

2. Cut from the shrimp tail along the dorsal line of the shrimp's back and stop at the cut at the shrimp head. In this step, you not only need to cut open the shrimp shell, but also cut about 2/3 of the shrimp meat, leaving 1/3 so that the shrimp meat will not fall apart.

3. Spread the cut shrimp body to the left and right, and remove the sand intestines with your hands or a toothpick.

4. Use scissors to cut the shrimp body horizontally several times to cut the shrimp tendons in the abdomen. This will prevent the shrimp body from bending when heated. You can also place the shrimp flat on the chopping board and gently flatten the shrimp body, which can also break the shrimp tendons.
