The most direct way to judge whether an egg is edible is to crack it open. If the yolk is scattered, the egg white and egg white are mixed together, or there is a rancid smell, it means the egg has gone bad. If the yolk is nearly spherical and slightly convex, and the albumen or white is just clumped around it, the egg is fresh.

If the yolk is a little deflated and the white is clear but still clumping together, the egg may be a little stale but is still edible. If the yolk is flat and the white is thin and almost watery, the egg is bad. For those who don’t know how to tell whether eggs are rotten or not, this operation is very simple and clear.

But if you don't want to boil the eggs for the time being and want to know whether they are good or not, you can put the eggs in a basin of cold water with the water level about twice the height of the eggs. If the egg lies flat on the bottom of the water, it is very fresh; fresh eggs will sink to the bottom of the bowl and may be lying on their side. But if it is tilted or standing upright in the water, it means it has been stored for a long time.

Slightly stale eggs, like those that are about a week old, will also sink to the bottom of the bowl, but will float up and down slightly. If it floats on the water, it means the egg has gone bad. If all else fails, you can turn the egg. But how can you tell whether the egg is rotten or not by turning it?

Place the egg on a flat surface and gently rotate it with your fingers. When a fresh egg is rotated, there is resistance in the eggshell and it will stop after two or three turns. The bad guys spin long and fast. If the egg does not turn fast or slow, it means it is not fresh enough. So next time you eat eggs, you can use these three little methods to test the quality of the eggs.

In addition, when you go to the supermarket to buy eggs, you may sometimes encounter some very cheap eggs. If the eggs have loose yolks or spots, remember not to buy them. If the yolks of eggs are loose, it is sometimes due to transportation problems or ruptured yolk membranes. Many reasons are due to long storage time, bacteria or mold invading the egg through the pores in the eggshell, destroying the protein and causing the egg liquid to be thin and turbid.

If the egg is not seriously scattered and does not smell strange, it can be eaten after being heated to high temperature. If bacteria multiply in the egg and it smells bad, do not eat it. The main cause of spotted eggs is inflammation of the hen's oviduct, which is caused by infection with E. coli or Salmonella. Another reason is that the quality of the eggs themselves has deteriorated, or they have been stored for too long, causing bacteria to remain on the eggshells. Eggs that have been infected with bacteria should not be purchased or eaten.
