1. Liquor

It has a high alcohol content. After storage and aging, it has a complex aroma with esters as the main body. Various types of liquor are made using koji and yeast as saccharification and fermentation agents, using starch (sugar) raw materials, and going through a process of cooking, saccharification, fermentation, distillation, aging and blending.

2. Beer

Beer is the oldest alcoholic beverage consumed by mankind and the third most consumed beverage in the world after water and tea. Beer was introduced to China in the early 20th century and is a foreign type of alcohol. Beer was translated into Chinese based on the English word "Beer", and it is called "beer" and is still used today. Beer is a low-alcohol wine rich in carbon dioxide that is brewed from barley malt, hops and water through yeast fermentation. Most of the international beers are added with auxiliary ingredients. Some countries stipulate that the total amount of auxiliary raw materials used should not exceed 50% of the malt used.

3. Wine

Wine is an alcoholic beverage made from fresh grapes or grape juice by fermentation. It is usually divided into red wine and white wine. The former is made by fermenting red grapes with their skins soaked in water; the latter is made by fermenting grape juice.

4. Yellow wine

Huangjiu is a national specialty of China, also known as rice wine. It is a brewed wine and occupies an important position among the world's three major brewed wines (huangjiu, wine and beer). Its unique brewing technology has made it a typical representative and model in the oriental brewing industry. Among them, malt koji rice wine, represented by Zhejiang Shaoxing rice wine, is the product with the longest history and the most representative. It is a grain wine made from rice. Unlike baijiu, huangjiu is not distilled and has an alcohol content of less than 20%. Different types of rice wine also have different colors of beige, yellowish brown or reddish brown. Shandong Jimo Old Wine is a typical representative of northern corn yellow wine; Fujian Longyan Chengang Wine and Fujian Old Wine are typical representatives of red yeast rice yellow wine.
