Braised pork with potatoes is a traditional dish belonging to Sichuan cuisine. The main ingredients are potatoes, pork belly with skin, etc. It tastes delicious, nutritious, tender and soft, and is easy to cook.

Method 1:

1. Wash the pork belly with skin and cut it into 1.5 cm square pieces. Mix well with one tablespoon of cooking wine, one tablespoon of soy sauce and two-thirds tablespoons of sugar, and soak for about half an hour. Dice potatoes, cut green onions into sections, break up star anise, and chop coriander.

2. Heat the pan and add a little oil. Take out the soaked pork belly and put it into the pan, stir-fry until oil comes out, drain the oil and put it into a plate. Then put the chopped onion, ginger, and star anise into the pan and stir-fry until fragrant. Then pour the sauce used to soak the pork belly into the pot and add about 1 liter of boiling water (it must be boiling water. If there is no boiling water, wait until the water boils before putting the meat in, otherwise the pork belly will be hard to chew), put in the pork belly and potato cubes and stew for about an hour.

3. The soup is almost dry (it’s up to you, if you want more soup, add more water or serve it earlier), turn off the heat, add the coriander, stir-fry for a few times, then serve on a plate.

Method 2:

1. Wash and cut the pork belly into pieces;

2. Heat 2 tablespoons of oil in a pan, and when the oil is hot, add a spoonful of sugar;

3. When the sugar is dissolved and bubbles appear on the surface of the oil, add the meat and start frying;

4. After the meat changes color, add 2 pieces of green onion, a few slices of ginger, star anise, a little pepper, and soy sauce (2 spoons of dark soy sauce, 4 spoons of light soy sauce);

5. Stir fry a few times after adding the ingredients, and stew in 2 large bowls of water;

6. After half an hour, put the diced potatoes into the pot of braised pork and stew with some chopped pepper and salt;

7. After about 20 minutes, poke the meat with chopsticks to test whether it is cooked;
