Spiced Braised Spare Ribs

Due to the high requirements of the braising process, it is difficult to achieve the effect of "flesh and bones connected", and the five-spice braised spareribs is a rare variety of braised dishes. Liao Spare Ribs selects fresh spare ribs, and uses a century-old secret marinade passed down from generation to generation using a unique steaming and braising technique to carefully marinate the ribs, giving them a long aftertaste and a strong aroma. Fuqi Feipian

A famous dish known to everyone in Chengdu. More than 50 years ago, there was a couple named Guo Chaohua and Zhang Tianzheng who made a living by making and selling spicy beef lung slices. They started out by selling their wares from a basket and setting up a stall to attract customers, and eventually they opened a shop. The beef lung slices they sell are actually beef scalp, heart, tongue, tripe, and beef, not beef lungs. It pays great attention to the selection of ingredients, the cooking process is meticulous and the seasoning is exquisite, and is deeply loved by the people. To distinguish it from other types of lung slices, it is called “Fuqi Feipian”. The slices of Fuqi Feipian are large and thin, glutinous and tasty, spicy and fresh, and tender.

Ingredients: 100 grams of beef, 100 grams of beef tongue, 100 grams of beef scalp, 150 grams of beef heart, 200 grams of beef tripe, spices (star anise, fennel, fennel, grass fruit, cinnamon, cloves, ginger, etc.), salt, red chili oil, pepper powder, pepper powder, sesame, cooked peanuts, soybean oil, MSG, and celery in appropriate amounts.

Method: 1. Cut the beef into pieces, rinse it together with the beef offal (beef tongue, beef heart, beef scalp, beef tripe), and marinate it with various seasonings such as spices, salt, and pepper powder. First boil it over high heat and then switch to low heat. Marinate until the meat is tender but not mushy. Then remove it from the heat and let it cool. Cut it into large thin slices and set aside.

2. Wash the celery and cut into 1 cm long segments. Fry the sesame seeds and the cooked florets and crush them into powder for later use.

3. Put the chopped beef and offal on a plate, then add the marinade, soybean oil, MSG, pepper powder, red chili oil, sesame seeds, chopped peanuts and celery, mix well and it is done.
