We all know that high temperature can be used for disinfection, especially for some restaurants outside. Every restaurant must prepare a disinfection cabinet, because our usual method of washing tableware cannot clean some hidden bacteria on the tableware. Only high-temperature disinfection in a disinfection cabinet can kill some invisible bacteria. So how long is the best time for high-temperature disinfection?

For tableware, high-temperature boiling is indeed the most common method of disinfection, and many germs can be killed by high-temperature disinfection. However, for high temperature disinfection to be truly effective, two conditions must be met: one is the temperature of action, and the other is the time of action.

There are many types of microorganisms that cause enteric communicable diseases. The bacteria that often cause acute diarrhea include pathogenic Escherichia coli, Salmonella, Shigella, Vibrio cholerae, Bacillus cereus, etc. Most of these bacteria will not die until they are exposed to a high temperature of 100°C for 1-3 minutes or heated at 80°C for 10 minutes. If the heating temperature is 56°C, these bacteria can still survive after 30 minutes. In addition, some bacteria are more resistant to high fever, such as anthrax spores and cereus spores.

Some people use boiling water to scald bowls before eating. However, due to insufficient temperature and time, it can only kill a very small number of microorganisms and cannot guarantee the killing of most pathogenic microorganisms.

If you want to use boiling water to truly disinfect, you must boil it for a while longer, 5 minutes after the water boils will be enough.

In addition, tableware disinfection can also be carried out in the following ways:

1. Use steam sterilization. Place the cleaned dishes in a steam cabinet or box, raise the temperature to 100 degrees, and sterilize for 5 to 10 minutes.

2. Disinfection in a disinfection cabinet, the temperature is generally around 120 degrees, and the disinfection takes 15 to 20 minutes. There are many products such as cupboards with infrared disinfection function in shopping malls, which can also play a role in disinfection and sterilization. But when purchasing, you need to pay attention to whether the product is qualified.
