2. Coconut Rice

Ingredients: 1 coconut, 125g glutinous rice, appropriate amount of rock sugar, 30g crystal candied dates, 30g raisins, 15 lotus seeds

(6) Place the closed coconut shell into a pressure cooker, steam for 70 minutes and then turn off the heat. Then simmer for 30 minutes. When cooked, open the lid and eat.

Seasoning: 75 grams of cooking oil, 10 grams of garlic cloves, 10 grams of coriander, 10 grams of chili, 5 grams each of coriander seed powder and cumin powder, and appropriate amounts of coconut milk and fine salt.

(1) Wash the chicken, remove the head and feet, chop it into cubes, put it into boiling water and cook until it is 50% cooked, then remove it from the water, drain it and cut the coconut meat into shreds.
