1. Mix shredded carrots

Ingredients: 180g carrot, onion, dried chili pepper, peppercorns

1. Cut the onion roots and leaves separately, and cut the dried chilies with scissors and set aside.

2. Grate the carrot into shreds, sprinkle with appropriate amount of salt and marinate for about ten minutes, then gently squeeze out excess water.

3. Place the scallion roots on the shredded carrots. Heat oil in a wok, add Sichuan peppercorns and dried red peppers and fry over low heat until the peppercorns are oily. When the oil is hot, pick out the Sichuan peppercorns and dried red peppers.

4. Pour the fried pepper oil over the shredded carrots with chopped green onions while it’s still hot, then add appropriate amounts of light soy sauce and white vinegar.

5. Mix well and serve on a plate, sprinkle with the remaining green onion leaves.

2. Cold Asparagus

Ingredients : 10 asparagus spears, 1 tablespoon peanut oil, 1 teaspoon sesame oil, 1 tablespoon soy sauce, 1 teaspoon sugar, 1 teaspoon salt

1. Wash the asparagus, remove the roots, blanch them in boiling water for one minute, then pour a teaspoon of salt into the boiling water.

2. After one minute, take out the asparagus and soak it in cold water for one minute. After taking it out, cut it into two pieces and put it on a plate.

3. In a small bowl, mix soy sauce, sugar and sesame oil.

4. Put peanut oil in a pot, heat it (not too high), add the chopped garlic, fry for one second (do not burn it), immediately pour the oil into the mixture in a small bowl, stir, and pour it on the asparagus.

3. Spicy and sour appetizer cold red oil enoki mushrooms

Ingredients : Enoki mushrooms, red radish, purple cabbage, chili pepper, shallot, garlic, white vinegar, red pepper oil, and salt in appropriate amounts.

1. Cut off the roots at the bottom of the enoki mushrooms. Boil water in a pot, add some salt and oil, put in the enoki mushrooms and cook;

2. When the enoki mushrooms are 90% cooked, add the shredded carrots and cook together. After all are cooked, cool and drain the water and put them in a bowl;

3. Add the prepared purple cabbage shreds, minced garlic, chili pepper, salt and white vinegar;

4. Add the prepared red pepper oil, mix well, put a round mold in the middle of the bowl, and put the prepared enoki mushrooms in the middle;

5. Remove the mold and sprinkle some chopped green onions on the surface.
