(2) Brewing process

If the timing and fermentation conditions are not paid attention to during the winemaking process, the wine will be infected with inappropriate acetic acid bacteria, thus producing a large amount of acid.

2. Who are you, acetic acid bacteria?

Alcohol will not spontaneously turn into vinegar under normal conditions, but a chemical reaction will occur in the presence of acetic acid bacteria.

Acetobacter, also known as Acetobacter, works in the following ways: when there is sufficient sugar, it can directly convert glucose into acetic acid; if there is insufficient sugar, it will first convert ethanol into acetaldehyde, and then convert acetaldehyde into acetic acid; when there is sufficient oxygen, acetic acid bacteria can oxidize alcohol into acetic acid, thereby turning wine into grape vinegar.

3. What should I do if my homemade wine has turned sour during the fermentation process?

First, you can filter the residue to slow down the fermentation speed, and then kill the fermentation bacteria through fumigation at high temperature. At the same time, you can add some rock sugar to sweeten it according to your taste. Take the wine out of the pot and let it cool without stirring it as much as possible. The wine will now be more mellow.
