Kaifeng is a city with a long history and culture. It was once a prosperous city in ancient times. Now, Kaifeng is probably one of the top cities in China in terms of economy and culture. As a representative city in history, Kaifeng’s local culture cannot be ignored, including its food culture. So what are the snacks in Kaifeng?

Kaifeng Xiaolongbao soup dumplings have a history of one hundred years, and their founder is Huang Jishan. The current state-owned No. 1 Baozi Shop is a famous noodle shop. Its predecessor was the "Diyilou Baozi Restaurant", which mainly sold soup dumplings and stewed noodles. The bun skin and filling are distinct, white in color and soft in texture, and the soup is oily and fresh and delicious. The noodles with braised sauce are smooth and fragrant, the sauce is thick but not greasy, and sticks to the noodles without falling off or flowing, which is quite appreciated by diners. Afterwards, bold improvements were made to the skin, fillings and appearance of the buns. The buns were steamed in small steamers instead of large ones. The buns were served on the table right after being steamed, and were very popular with customers, and the business became even more prosperous.

Ma Yuxing's "Barrel Chicken"

Bucket Chicken is a famous specialty of Kaifeng. It is made with local high-quality hens and simmered in century-old soup. The color is golden, fat but not greasy, fresh, crispy and fragrant. "Ma Yuxing" is a famous traditional food store in Kaifeng, and its full name is "Halal Ma Yuxing Chicken and Duck Store". The restaurant was first opened by Ma Yongling in 1864 on the southeast side of the Drum Tower, and bucket chicken was one of its main dishes.

The Three-Flavor Lotus Pastry looks like a lotus bud that is just beginning to bloom. It is fragrant, crispy and delicious. It is a famous traditional pastry in Kaifeng. The three-fresh lotus pastry is made of refined flour, white sugar, eggs, lard and flour in a certain proportion to make the dough; the fillings are made of jujube paste, hawthorn cake, honey and essence, and the dough is used to wrap the fillings to make high and round billets. Finally, it is pierced three times with a knife to expose the fillings, and then peeled with eggs and baked in the oven. The three-fresh lotus crisps are refined and processed, with elegant and lifelike colors and vivid images. Eating it makes people feel relaxed and happy, as if they were swallowing fairy fruit.

Spiced Rabbit Meat

When talking about Kaifeng's spiced rabbit meat, many outsiders will praise it. Spiced rabbit meat, unique craftsmanship and excellent marinade. Generally, wild rabbits weighing more than 1.5 kg are used to make it. First, gut the rabbit and remove its internal organs. After air-drying for seven days, soak it in cold water. Then chop it into pieces, blanch it in boiling water, wash it, and place it in the pot in layers. When placing it, leave a round hole in the middle, then mix the auxiliary ingredients such as pepper, fennel, cumin, amomum, apple, cardamom, cloves, rock sugar, flour sauce, sugar and so on in proportion, put them into the round hole and add the old soup. After boiling over high heat for one hour, then boil over low heat for one hour, and remove from the pot after it cools down. The finished product is fragrant, without any grassy smell, and is salty, crispy and has a long-lasting flavor.
