How to make fried egg vermicelli without sticking to the pan?

1. Cook until soft: Put the rice noodles into a pot of boiling water and cook until 70% cooked. When the rice noodles are slightly expanded, take them out and rinse them with cold water.

2. Mix with oil: After taking it out, cool it with cold water and mix it with a little sesame oil.

3. Heat oil: Put more oil in the pot and heat it until it is 70% cooked.

4. Quick stir-fry: Add a little red pepper, scallion, ginger and other ingredients and stir-fry until 80% cooked. Add rice noodles and stir-fry quickly.

Note: Cook the noodles until 70% done: Use chopsticks to pinch them off. Try not to use a spatula to stir the noodles. Use a pan to stir.

Cook the rice noodles in hot water, take them out, rinse them in cold water, and then dry them. Note that the length of time they are dried will affect the hardness and taste of the noodles. Add oil over high heat, stir-fry the shredded pork for a few times until the oil changes color, add the water spinach and stir-fry until cooked, add the rice noodles, then immediately add soy sauce and stir-fry for a few times to color the noodles, add salt and chili powder, stir-fry until it’s well seasoned, add the scallions and MSG when it’s almost time to serve, stir-fry a few more times and it’s ready to go.

Fried noodles tend to stick to the pan, so I like to put more oil in and fry an egg first. Fry it until cooked, put the egg on a plate, and then use the remaining oil to fry the noodles so they won’t stick to the pan. Of course the pot must be clean first.

Cut the lean meat into thin strips, add a little salt and mix well with cornstarch, add a little oil and mix well again. This will make the fried meat more tender.

The water spinach can be replaced with other green vegetables, but the taste of other green vegetables is not as authentic and delicious as that of the water spinach.

1. Bring a pot of water to a boil, add vermicelli and cook for 2-3 minutes until soft. Remove from the pot and rinse with cold water, drain and set aside.

2. Heat the oil in a pan, beat in an egg and fry it quickly. Add in chopped dried chilies and shallots and stir-fry until fragrant.

3. Add bean sprouts and rapeseed and stir-fry quickly until slightly softened (don’t stir-fry for too long). Add rice noodles and stir-fry quickly. If you can’t stir it, use chopsticks.

4. Add soy sauce, light soy sauce, salt and chicken essence and stir-fry until the color is even. Sprinkle with chopped green onion, sesame oil and white pepper powder, mix well and serve. In conclusion, if you use hot water to soak the noodles, you must soak them in cold water, or if the noodles are run with cold water, if you really can't learn the skills, you can just wipe the pot with ginger slices before cooking.
