In fact, sesame oil can also be called sesame oil or sesame oil. It is a substance extracted from sesame seeds. It has a strong taste, so it is called sesame oil. When extracting sesame oil, you can use machine pressing and grinding methods. The production steps of sesame oil are very complicated, and the original production method is manual squeezing. Nowadays, sesame oil is used in the preparation of many cuisines, including soups, cold dishes, and stuffings, which enhances the taste of the dishes. 1. Classification of sesame oil 1. Sesame oil Features : Has a strong or noticeable sesame oil aroma. The unique ingredients in sesame are processed through high-temperature roasting process to produce substances with special aroma, which makes sesame oil have a unique aroma, different from other edible vegetable oils, so it is called sesame oil. Sesame oil can be divided into two types according to the processing technology: small-milled sesame oil and machine-made sesame oil. Small-milled sesame oil is made using the water-substitution method, which has a stronger and purer fragrance. The small-milled sesame oil produced by the water substitution method has a history of more than 400 years in China. Except for a few areas such as Tibet and Qinghai, it is produced in all other provinces, cities and autonomous regions. The traditional production process is: material selection, cleaning, seed frying, pulping, stirring, shaking, sedimentation, oil skimming and packaging. Mechanized sesame oil refers to sesame oil made by machine pressing. It has a distinct sesame oil aroma. In the early 1980s, Beijing, Henan, Hubei and other provinces and cities began to introduce foreign equipment for production. The production process is: material selection, cleaning and removing impurities, frying, steaming and frying (adjusting temperature and moisture) or pulping, pressing, sedimentation and filtration, and finished product. 2. Ordinary sesame oil Features : light aroma, processed by general pressing, leaching or other methods. Because sesame oil contains a certain amount of vitamin E and substances unique to sesame oil, such as sesamol and sesamol, which have strong antioxidant capacity, sesame oil is easier to store than other vegetable oils. 2. Identification Method 1. Color discrimination Pure sesame oil is red or orange-red. Machine-pressed sesame oil is lighter in color than small-milled sesame oil. If rapeseed oil is mixed into sesame oil, the color will be dark yellow, and if cottonseed oil is mixed into sesame oil, the color will be dark red. 2. Water test method Use chopsticks to dip a drop of sesame oil and drop it onto the surface of calm cold water. The pure sesame oil will appear as large, thin, colorless, transparent oil spots. The oil droplets of adulterated sesame oil are small and thick and not easy to spread. 3. Smell method The aroma of small-milled sesame oil is mellow, rich and unique. If it is mixed with peanut oil, soybean oil, refined oil, rapeseed oil, etc., not only will the aroma be poor, but there will also be other odors such as peanut and bean smells. Some sesame oils are blended with edible flavors and have a relatively poor smell. |
