Material

1. Put the eggs into the pot and boil for 8 minutes. Take them out and immediately immerse them in cold water and wait for a while. After the eggs cool down, carefully peel off the eggshells.

2. Peel the turmeric, wash it, cut it into thick slices, pat it gently to loosen the fibers for better flavor, and then dry it. Add a small amount of oil to the pan, add the ginger slices, and stir-fry over low heat. Stir-fry until the ginger slices are slightly dry, then set aside.

3. Remove the hair from the pig's feet, wash them, and blanch them in boiling water. Take them out after they change color, wash off the foam, and drain off the excess water.

4. Put rock sugar and sweet vinegar into the pot;

5. Pour in black rice vinegar and bring to a boil over high heat;

6. Add the peeled eggs; then pour in the fried ginger slices and bring to a boil again; finally add the pig's feet, bring to a boil over high heat and then turn to medium-low heat;

Simmer until the pig's feet skin is soft (about 1.5 hours).

1. Wash and peel the ginger first (the ginger peel can be saved and dried and used to boil water for rubbing the body during confinement after giving birth). If you peel the ginger and rinse it with water, wait until the ginger is dry before slicing it. After slicing, put it in a wok and stir-fry continuously, adding a little salt while stir-frying (salt can make the moisture of the ginger dry faster). When the color of the ginger turns into the color of cooked eggs, turn off the heat and put it in a breathable basket for later use.

2. Cut the pig's feet into large pieces, not too small pieces, because it will become soft easily with vinegar. Then boil a pot of water and put the pig's feet in to blanch. Pour it out without rinsing with cold water, and set it aside for later use.

3. Boil the eggs with their shells and set aside.

4. Put the sweet vinegar in a clay pot (because vinegar is sour and ingredients are constantly added to the pot and it is used for several months, so it is not suitable to use metal materials to cook it.) Add a piece of sugar after boiling. Because vinegar is sweeter than the aged vinegar we usually use, the amount of sugar can be adjusted according to personal preference. When it boils again, add ginger. After boiling for half an hour, you can add pig's feet and eggs. After all the ingredients are added and boiled, turn to the lowest heat and simmer slowly. The pig's feet and eggs can be eaten after an hour. The ginger is still quite spicy, but some people's taste makes it less spicy as it is boiled, and it tastes better and better. It is definitely impossible to finish a pot in one go. Remember to boil it and put it aside every time you don't want to eat it. Each time you add ingredients, put them in the pot like the first time.

Put ginger and vinegar in the stew pot, the ratio of ginger to vinegar is about 1:3. Bring the vinegar to a boil over medium heat, then turn to low heat and add the cleaned and chopped pig's feet. Cook for 2-3 hours. When the pig's feet are tender, reduce the sauce.

If you still want to eat ginger vinegar eggs, you can wash the eggs, cook them with the shell and meat together, crack the shell before the juice starts to collect, cook them for a while like tea eggs, then put them in the refrigerator together with the remaining soup, and soak them overnight before eating.

The remaining soup after boiling the pig's feet is very thick and it immediately turns into jelly when placed in the refrigerator. As a result, I had to take it out, add twice as much water and boil it before I could use it to soak the eggs.

Operation process

1. After cutting the pig's feet into pieces, use charcoal fire to remove the pig hair, soak them in clean water for about 15 minutes, and then scrape them clean with a knife.

2. Boil 5 bowls of water in a pot, put the pig's feet in, cover and cook for about 15 minutes. Take out and rinse with clean water to remove the fishy smell, and drain in a colander.

3. Scrape the ginger clean, crack it with a knife, then put it into a hot iron pan and fry until the water is dry. Remove from the pan when the ginger turns brown.

4. Pour about 2 bowls of water into the pot, put the eggs in, boil the water, cook the eggs until they are done, then peel and keep them for later use.

5. Wipe the clay pot dry, put the pig's feet, ginger, eggs, 750 grams of sweet vinegar and 500 grams of sour vinegar in at the same time, cover and simmer over low heat for about 2 hours. Move the pot away from the fire and simmer for about an hour, then put it back on the fire and simmer for about half an hour before eating.

6. If you are not in a hurry to eat it after cooking, it will taste better if you eat it the next day. It tastes better if it can be stored for several days.

Nutritional Value

1. The collagen protein in pig's trotters can be converted into gelatin during the cooking process. It can bind a lot of water, thereby effectively improving the body's physiological functions and the water storage function of skin tissue cells, preventing premature wrinkles on the skin and delaying skin aging;
