Dried kelp

The iodoacetic acid and mannitol contained in kelp are both soluble in water. If the dried kelp is soaked in water for more than several hours, about 90% of the iodoacetic acid will be lost, and the mannitol will also be dissolved, thus reducing the nutritional value of the kelp.

Therefore, soak the newly bought dried kelp in water for about 6 hours, then scrub it with your hands to remove the fine sand and mucus attached to the kelp. The soaking time cannot be too long, otherwise the nutrients in the kelp will dissolve in the water, causing nutrient loss.

Fresh kelp

Nowadays, due to the increasingly serious pollution of seawater, seafood will more or less absorb some harmful substances, usually arsenic and arsenic compounds. Therefore, from a safety perspective, when eating kelp, be sure to wash it thoroughly. After the kelp is soaked in water, arsenic and arsenic compounds will dissolve in the water. Therefore, when soaking kelp, the amount of water should be sufficient, and the water should be changed during the soaking process.

Therefore, under normal circumstances, fresh kelp can be soaked in clean water for about 5 hours, and the water should be changed several times for cleaning in the middle. If you buy kelp knots, you need to open the kelp knots and clean the mud and sand inside. If the soaking time is too long, the nutrients contained in the kelp, such as inorganic salts, water-soluble vitamins, etc., will dissolve in the water, resulting in a decrease in the nutritional value of the kelp.
