When it comes into contact with water, it releases a large amount of carbon dioxide to form small bubbles. In addition, the crystal shape of baking soda can be used as an abrasive, so it is very effective for cleaning.

Sodium bicarbonate is easily decomposed by heat. It will decompose rapidly above 65°C and completely decompose into carbon dioxide, water and sodium carbonate at 270°C. It is a commonly used leavening agent in food production:

2NaHCO3 → Na2CO3 + H2O + CO2
