A bottle of cold water can easily distinguish real and fake honey

Experts pointed out that in terms of physical and chemical properties, sugar composition, HNF (hydroxymethylfurfural) content, enzyme content and pollen grain content can all be used to identify the authenticity of honey. However, for ordinary consumers, the simplest method is to dilute it.

First, brew the honey with cold water and pour about half of it into a mineral water bottle and shake it quickly. If it is real honey, the following phenomena will occur:

1. A large amount of foam appears on the top of the liquid and does not subside for a long time. Sometimes the foam can last for 2 hours.

2. The liquid part appears turbid because honey contains protein, pollen and gelatin. Fake honey not only has less foam that dissipates easily, but the liquid part is also very clear.

3. After adding hot water, the taste is sweet and a little sour, because pure honey contains many organic acids and enzymes, but fake honey only tastes sweet.

4. Checking whether honey is crystallized is also a way to determine whether the honey is real or fake. Honey contains a large amount of fructose and glucose. When the glucose content is high, the water content is low and the temperature is low, honey will easily crystallize. However, fake honey, which uses fructose as the main raw material, will not crystallize.

Among them, litchi honey and citrus honey have high glucose content and are easier to crystallize, while longan honey is not easy to crystallize. Therefore, "liquid honey may be true or false, but completely crystallized honey must be real honey."
