Those who like to drink rice wine can also ferment it at home. In the process of making rice wine, you need to pay attention to fermenting it for a few days and then adding water. So what is the time to add water?

Rice wine fermentation 36 hours with water

What you do is make fermented glutinous rice. Fermented glutinous rice - fermented glutinous rice is not wine. Because the alcohol content of fermented glutinous rice is only about 1%, it is considered a beverage.

How to make rice wine with alcohol content above 6%:

1. Wash 1kg glutinous rice, soak in water for 1 hour and steam

2. Wash 0.5~1kg of koji several times with 3L of cold boiled water and filter it with a 200-mesh nylon mesh bag.

3. When the glutinous rice cools down to below 30 degrees, add the koji water and mix well.

4. After 20 to 24 hours of fermentation, a lot of bubbles will be produced and the base wine is ready.

Wash and soak 5.4kg of glutinous rice for one hour and steam the drier rice.

6. Let the rice cool down to below 30 degrees, pour in the base wine and mix well.

7. It is best to weigh the total weight of the following fermented products within 5kg*3.3=16.5kg.

8. After one day of fermentation, the temperature must be lowered to 19-22 degrees, and it is best to keep the temperature at 19 degrees.

9. After seven days, fermentation is basically completed.

10. Take out some rice grains and store them in the refrigerator.

11. Filter with 200# nylon bag.

12. Continue to ferment for a few days to mature.

13. Find pressure-resistant PET bottles for cola and other products for packaging and remove the sediment.

14. Leave the bottled rice wine for another day, remove the sediment, and store it with a lid.

15. Pay attention to the pressure inside the bottle to prevent it from exploding, and release the air at the right time.

16. When the pressure is not too great, mix with acidulants, sweeteners and flavoring agents.

17. Re-pack the Coke bottles and pressurize them to a similar pressure to that of Coke and refrigerate.

18. The alcohol content is about 16%. If you want to make 6% rice wine, just add cold boiled water to mix.
