How to squeeze sesame oil

Sesame oil is a kind of oil that is consumed quite frequently in our daily life. Sesame oil has a fragrant taste and high nutritional value, so many people prefer to consume sesame oil. How to make sesame oil at home

(1) Screening. First use a fine sieve to remove dust and debris from the sesame seeds, and then use a dustpan to remove dust and unripe seeds.

(2) Rinse. Fill a plate or jar with water, pour in the sesame seeds, stir for 10 to 15 minutes, remove the debris floating on the water, then take out the sesame seeds, place them on a fine-mesh sieve to drain the water and soak them for at least half an hour.

(3) Roasted sesame seeds. Roast the washed sesame seeds in an iron pan. At the beginning, because there is a lot of water, the fire should be stronger and the stirring should be even. After the large amount of steam in the pot disappears, turn to low heat. Stir frequently and evenly to prevent the sesame seeds from burning. Keep frying until the sesame seeds turn reddish brown when crushed by hand. Sprinkle in 2.0% to 2.5% cold water by weight of the sesame seeds and continue frying while serving.

(4) Blow away the smoke. The temperature of the sesame seeds just out of the pot is very high. Although the temperature has dropped to about 150℃ after sprinkling a little water, it still needs to be cooled down, otherwise the sesame seeds will easily burn and affect the quality of the sesame oil. You can put the sesame seeds out of the pot in a winnowing basket, and drop the sesame seeds from a high place into the basket. At the same time, blow cool wind from the side to disperse the smoke and dust, lower the temperature, blow away the sesame bran, and get relatively pure cooked sesame seeds.
