Baking Soda

Baking soda is actually a chemical raw material. Its chemical name is sodium bicarbonate, also known as baking soda. It appears as tiny white crystals, is less soluble in water than sodium carbonate, and is less toxic. If the water is above 50 degrees, it can decompose into sodium carbonate, carbon dioxide and water. Sodium bicarbonate is a strong alkaline substance and forms an acid salt with weak acid.

When dissolved in water it becomes a weak base. Therefore, we can also use it as a good leavening agent when cooking food. Even when cleaning the kitchen, directly adding baking soda can be very effective in cleaning dirt and removing odors.

Edible alkali

Although both are high-alkali foods, they have completely different ingredients. Edible alkali is sodium carbonate and baking soda is sodium bicarbonate. Edible alkali is used as a leavening agent and meat tenderizer. It can also remove the sour taste on leavened dough and increase the flavor of food. Alkali food actually also includes baking soda. The only difference is that the effects are slightly different. Baking soda is squeezed and consumed as a fluffy drink. It's the same as the difference between potatoes and mashed potatoes.
