How to make spicy hot peppers delicious

Big spicy pepper is actually another name for green pepper, which is a very common vegetable in people’s daily life. This vegetable is not as spicy as chili pepper and even has a sweet taste, so it is very popular. Stir-frying vegetables like chili peppers is the most common way to cook them. However, if you want to make them taste better, you need some skills. Here I will introduce how to stir-fry chili peppers to make them taste better.

Method 1: Scrambled eggs with green peppers:

Materials

A handful of green peppers (long and thin ones are spicy enough)

3 large eggs

3 cloves of garlic, the finer the better

Light soy sauce

A small amount of dark soy sauce, just a little bit for color adjustment

Salt to taste

Step 1 Chop the long, pointed, spicy green peppers into small pieces and put them in a large bowl for later use (the laziest way in the picture is to mix the chopped peppers, eggs, minced garlic, soy sauce, and salt, mix them all well, and then stir-fry until cooked)

Step 2 Beat the eggs in another bowl.

Step 3: Pour the beaten egg liquid into the green pepper and mix well. Crush and chop the garlic and add it in and mix together.

Step 4: Heat the pan and oil, pour the mixed eggs and green peppers in, don't rush to fry (otherwise it will be disgusting), stir well, and fry after a while

Step 5: Stir-fry until the egg is no longer watery, add light soy sauce, salt, and chicken essence (optional), stir-fry until cooked, and add a little dark soy sauce for coloring before removing from the pan.

Tips

1. Add to the pan and stir well, wait for a while before frying, otherwise it will be disgusting, adding some rice wine will make it fragrant

2. The laziest way is to mix the chopped pepper/egg/minced garlic/light soy sauce/salt, then stir-fry until cooked. Very suitable for office workers who go home to cook at night

3. Minced garlic is necessary to make the dish fragrant. The more minced garlic, the better.

Method 2: Stir-fried pork with green pepper

Step 1

Cut the green pepper horizontally, remove the core, and cut into strips. Cut the tenderloin into strips along the grain.

Step 2

Put the shredded pork into a bowl, add dark soy sauce, light soy sauce, sugar (half of the total amount), and cooking wine, mix well with your hands and marinate for 15 minutes

Step 3

Add one tablespoon of water to the meat, and when the meat has absorbed all the water, add dry starch and mix well.

Step 4

Add a small amount of oil to the wok, add the green pepper shreds and stir-fry until soft, then set aside.

Step 5

Heat the pan again, pour in a small amount of oil, add ginger and garlic slices when the oil is hot, pour in the shredded pork and stir-fry quickly (use high heat to stir-fry quickly so that the shredded pork is tender, otherwise the shredded pork will become tough)

Step 6

When the shredded pork is about 80% cooked, add the fried green pepper shreds and stir-fry evenly.

Step 7

Add salt and sugar (the remaining half) and stir well, then pour in water starch to thicken, stir well and serve.

Tips

The meat is easiest to cut into nice shreds when it is frozen to a semi-hard state.

First add various seasonings to the shredded pork and mix well to taste, then add water, use your hands to get all the water into the meat and then mix with starch. This is done to let the shredded pork taste first; adding water is to make the shredded pork more tender; then mix with starch to wrap up the moisture in the meat so that the shredded pork will be tender when stir-fried. This is a little trick taught by a chef in Hong Kong. At the end, you need to mix some salad oil and sesame oil into the meat to make it easier to separate the shredded meat and prevent it from sticking together when frying.

Why do I always emphasize using your hands when mixing the meat? Because if you use chopsticks, you can only mix the various seasonings evenly, but you can't help the seasonings penetrate into the meat tissue. Using your hands can achieve this goal, and the shredded meat will be more flavorful.
