Cabbage is not normally eaten after it blooms, because the nutritional value of cabbage at this time is relatively low, but it can be eaten as long as you wash it clean. Chinese cabbage usually blooms when the storage environment is low temperature, and the heart of the cabbage will appear. Placing the cabbage indoors will cause the cabbage to bloom. Some places prefer to eat cabbage after it blooms.

The phenomenon should be the bolting of cabbage. Cabbage is a biennial crop. The cabbage heads we usually eat belong to the vegetative body of Chinese cabbage. When encountering low temperature and long daylight, the cabbage continues to grow and completes the entire life process of flower bud differentiation, bolting, flowering, and seed setting. In other words, cabbage bolting is not a pathological phenomenon, but a necessary stage in the cabbage growth cycle. The cabbage stored in the winter is usually sown around the beginning of autumn and harvested in early to mid-November, when the cabbage has completed its vegetative growth. Consumers are accustomed to storing the cabbage they buy outdoors. After experiencing a long period of low temperature, flower buds will form in the heart of the cabbage. If the cabbage is then placed indoors or the temperature rises, the cabbage will slowly begin to sprout.

There is no obvious difference in nutritional value and taste between bolting cabbage and ordinary cabbage. In some areas in the south, there is even a dietary habit of eating bolting cabbage (i.e. cabbage stems), but what they eat is a special variety used to produce cabbage stems.

However, it should be noted that if the cabbage starts to bolt during its vegetative growth period (before the cabbage head is compacted), it will inevitably consume the nutrients in the cabbage head and affect the quality of the cabbage. Therefore, do not choose cabbage that has already bolted when purchasing.
