2. Sweet Chicken with Rehmannia glutinosa

Ingredients: 250g raw Rehmannia root, 30g longan flesh, 5 red dates, 1 hen, 150g maltose.

Method: Kill the chicken, remove the hair, internal organs and claws, wash it clean, cut it from the back neck bone to the tail, wash away the blood, put it in a pot of boiling water, cook for 3 minutes and then take it out. Wash the raw Rehmannia root and cut it into 0.5 cm square particles; tear up the longan meat, mix it evenly with the raw Rehmannia root, add maltose and season it, then stuff them into the chicken's belly. Put the chicken into a steaming pot with its belly facing down. Remove the core of the red dates, wash them, place them on the chicken, pour in rice soup, seal the mouth of the pot with wet cotton, and steam it over high heat for 2 hours.
