You can preserve the chili for a long time through certain methods, such as drying the chili, making chili sauce or chili pickles, etc.

What to do if you have too many peppers to eat

Method 1

Wash with clean water, drain, and dry in the sun until 90% dry.

2. Thread the peppers through the stems with thread and hang them up to dry.

3. Place in a box in a cool and humid place.

If you want to preserve the peppers, you can dry the moisture first to ensure that the peppers are intact. Put the compartments in the box without squeezing too much, and put them in a cool place. They can basically be preserved for a month.

Method 3:

1. The warehouse must be strictly disinfected by fumigation and spraying with formaldehyde, peracetic acid, bleaching powder, etc. for thorough disinfection.

2. Harvest nearby and choose plots with few diseases and vigorous growth. The peppers should be full, firm, complete, and have a shiny black skin. Remove inferior and diseased fruits. Pack in baskets or boxes to avoid collision and squeezing during transportation.

3. Soak the peppers in a bactericidal preservative for 2-3 minutes to remove surface germs and provide a protective layer for the peppers. After drying, put it into storage for pre-cooling.

4. Precooling should be thorough and rapid.

5. Packing: Put the pre-cooled peppers into pepper fresh-keeping bags, 5-10 kg per bag, and tie the bag. Fresh-keeping bags should be moisture-permeable and breathable PE bags to prevent "sweating" and gas poisoning (carbon dioxide). When the carbon dioxide reaches 5%, the bags should be opened and let in air for about an hour.

6. The refrigeration temperature should be controlled at around 8°C, and the temperature difference should be 0.5°C.

7. Pay attention to mildew prevention during storage. If mildew is found, use fresh-keeping smoke agent to kill it in time. With proper measures and perfect conditions, peppers can be kept fresh for 3.5-4 months.
