In the past, many people could not tell the difference between oolong tea and green tea, probably because green tea and oolong tea are produced from the same tea tree. However, the biggest difference lies in whether or not it has gone through the fermentation process. Because the catechins in tea will combine with each other as the fermentation temperature increases, the color of the tea will become darker, but the astringency of the tea will also decrease. The components formed by the combination of these catechins are the polyphenols in oolong tea.

Polyphenols and catechins with antioxidant effects can affect the activation of various enzymes in our body. About half of the catechins contained in tea leaves are converted into polyphenols in oolong tea. Therefore, under the dual effects of the antioxidant effect of catechins and oolong tea polyphenols, oolong tea exhibits various functions that green tea does not have.

The excellent quality of Oolong tea is achieved by first selecting fresh leaves of excellent tea trees as raw materials, and strictly following the picking standards; secondly, by using extremely sophisticated production techniques. The production procedures include airing, shaking, killing, wrapping, kneading, rolling and baking. Oolong tea is divided into three subcategories due to the different ways of making it: "jumping green", "shaking green" and "hand-made green".

From then on, the owner called it "Oolong Tea".

It is also said that the person who first invented the method of making oolong tea was named Su Long (because he was dark-skinned, people called him oolong), so the tea was named after the person.
