Nitrite is actually quite common in our daily life. This kind of sodium nitrite actually refers to sodium nitrite, but the physical properties of sodium nitrite itself are very obvious. The effect of sodium nitrite seems to be very similar to the appearance and taste of the ordinary salt. This kind of sodium nitrite still has very good chemical properties. Under normal circumstances, the nitrite (NO3-) contained in the solution is not a strong oxidizing property for people's health. It will only show its strong oxidizing property when there is a strong acid in the solution or at high temperature.

Nitrite mainly refers to sodium nitrite. Its physical properties are: colorless crystals, slightly salty, very soluble in water, similar in appearance and taste to table salt. It has the common chemical properties of salts. Generally, nitrite (NO3-) in the solution does not have strong oxidizing properties. It only shows its strong oxidizing properties when there is a strong acid in the solution or at high temperature. Sodium nitrite is unstable and will decompose and release oxygen when heated under high temperature conditions.

Sodium nitrite is a strong oxidant widely used in industry and construction. It is also allowed to be used in limited quantities in meat products as a colorant or preservative. Sodium nitrite can easily cause food poisoning. Accidental ingestion of 0.3 grams to 0.5 grams of sodium nitrite can cause poisoning or even death.

There are many uses for sodium nitrite, but the harm caused by improper use cannot be ignored. Nitrite has always been regarded as a carcinogen in the medical field. If we consume foods containing a large amount of nitrite for a long time, it will cause people to develop esophageal cancer and gastric cancer.
