Sashimi is especially popular among Japanese people. Many people think that eating sashimi can keep the original flavor of the fish and take in all the nutrients, but they often ignore the health risks it contains. So, what are the dangers of eating sashimi? How can we eat sashimi healthily?

The dangers of eating sashimi

Many people like the fresh and delicious taste of sashimi, but they don’t know that eating raw fish is very harmful to the liver. It is very easy to be infected with liver fluke and even induce liver cancer.

According to nutrition and health experts, liver fluke disease is a parasitic disease that mainly causes liver and gallbladder lesions. People have a very high chance of being infected by eating raw or half-cooked freshwater fish, shrimp and snails containing live metacercariae of liver flukes. Currently, there are millions of liver fluke patients in Guangdong Province alone, and many of them became infected due to eating raw fish and shrimp.

The most common clinical symptoms include fatigue, upper abdominal discomfort, indigestion, abdominal pain, diarrhea, dull pain in the liver area, liver enlargement, dizziness, etc. Severe infection can cause cirrhosis of the liver and ascites, and even death in the late stage.

How to eat sashimi in a healthy way?

1. Eat with mustard

The bactericidal ingredients in mustard can kill bacteria such as E. coli and Staphylococcus aureus, and inhibit the growth of mold and other toxic bacteria in food. In addition, according to data from the Japanese Food and Nutrition Research Institute, mustard can also inhibit the activity of substances that cause cancer and inhibit the activity of acidifying enzymes in the liver. Therefore, when eating sashimi, it is best to dip it in mustard. However, experts remind that mustard is highly irritating, so pregnant women and people with stomach and eye diseases should eat less.

2. Vinegar-soaked sashimi

According to a survey conducted by relevant institutions, nearly half of raw and frozen aquatic products were found to contain Vibrio parahaemolyticus, which can easily lead to food poisoning after being absorbed by the human body. However, some studies have shown that Vibrio parahaemolyticus is sensitive to acid and will die in 1-3 minutes in ordinary vinegar. Therefore, you can soak raw fish in vinegar before eating it, or add some vinegar during the cooking process of seafood to effectively kill Vibrio parahaemolyticus. In addition, Vibrio parahaemolyticus is also sensitive to temperature and will die in 5-10 minutes when heated to 56 degrees Celsius, so it is recommended not to cook seafood for too short a time.
