How to process lotus root starch

How to process lotus root starch

In addition to three meals a day, most people like to eat other nutritional supplements to supplement their body's nutrition. Lotus root powder is a nutritional supplement that many people choose. Lotus root powder is mainly made from lotus roots ground into powder and is a drink that can replace a regular meal. But some people like to make things by themselves because it gives them a great sense of accomplishment, so they thought of making lotus root powder by themselves. So what is the process for making lotus root powder yourself?

Traditional production process of lotus root starch

1. Grinding: Wash the fresh lotus root, remove the lotus root nodes, put it in a beater or stone mortar and crush it, then add clean water and use a stone mill to grind it into lotus root pulp.

2. Wash the pulp: Put the lotus root pulp in a cloth bag, place a vat or basin under the bag, rinse the bag with clean water, stirring the lotus root residue in the bag while rinsing, until clear water is filtered out.

3. Blending: Bleach the lotus root pulp in water for 1 to 2 days, stirring once a day. After the water becomes clear, remove the fine lotus root residue floating on the surface of the water and the mud and sand at the bottom. Then put the slurry in the middle into another container, dilute it with clean water and let it settle. Repeat this 1 to 2 times until the lotus root powder turns white.

4. Drain and bake: Put the rinsed and settled lotus root powder into a clean cloth bag, then hang it up with a rope. It will be drained in about half a day (you can also put a clean cloth bag filled with wood ash into it to absorb the water). After draining the water, take out the lotus root starch, break it into dough balls of about 500 grams, dry it in the sun for about an hour, then use a knife to cut the dough into thin slices; continue to bake or dry it in the sun to make lotus root starch. The general powder yield is around 10%.

Things to note when making lotus root powder: It is better to use fresh old lotus roots, and the finer the lotus root pulp is ground, the better, because the finer the grinding, the higher the powder yield.

Modern production technology of lotus root starch

Lotus roots for processing - cleaning - crushing - filtering - sand removal and purification - concentration and refining - dehydration - drying - packaging - finished product.

1. Selection of raw materials: In order to ensure the flour yield and starch quality, the raw materials selected during processing should be fresh and mature lotus roots with neat appearance, uniform thickness, normal color, smooth and clean individual surface, and no obvious defects.

2. Cleaning: The main purpose of cleaning is to remove the mud and sand on the surface of the raw materials. It is a key step in the processing of lotus root powder and is related to the purity and taste of lotus root powder.

3. Crushing and filtering: The purpose of crushing is to destroy the organizational structure of the material so that the tiny starch particles can be smoothly disintegrated and separated from the lotus root. Starch extraction, also known as pulp-residue separation or separation, is a key link in starch processing and directly affects the starch extraction rate and starch quality.

4. Sand removal and purification. The main purpose is to further remove the sediment from the material.

5. Concentrated and refined. Professionally designed according to the properties of lotus root starch particles, it can concentrate the starch slurry and completely separate the non-starch components in the starch, so that the starch milk concentration discharged from the last stage cyclone reaches 23Be', and the whiteness and purity meet the standards. It is an ideal choice for starch washing equipment.

6. Dehydration. The concentrated starch slurry still contains a lot of water, and the water in the material needs to be further removed before entering the drying stage. For dehydration, a three-legged dehydrator can be used, and a scraper centrifuge can be used for large factories.

7. Drying: Air flow drying is adopted for drying. The air flow dryer uses high-speed hot air flow to suspend the wet starch in it and dry it during the flow of air. It has the characteristics of high heat transfer coefficient, large heat transfer area and short drying time.

8. Starch cooling, sieving and packaging: After starch is dried, the temperature is high. In order to ensure the viscosity of the starch, the starch needs to be cooled quickly after drying. Adopting the cold air system, the equipment has the advantages of low energy consumption, good cooling effect, stable operation and large processing capacity. The cooled starch enters the finished product screen and enters the final packaging process while ensuring product fineness and output.

When you eat anything, you need to know where it comes from. After reading the above two production processes, the difference is obvious, which lies in the exquisiteness. Seeing the methods used by the ancients, it is not difficult to think of the value of lotus root starch. Traditionally it was done by manpower, but now it is done by machines, which is convenient and the process takes less time. Convenient for application by the national population.
