First of all, allicin originally exists in garlic in the form of alliin. After encountering oxygen, it is converted under the action of alliinase. Therefore, in order to make garlic produce allicin, when eating garlic, first, eat it raw. If you don’t have stomach discomfort, try to eat the garlic raw to prevent allicin from losing its pharmacological activity in a hot environment. The second is to mash or cut the garlic into thin slices and expose it to the air for 15 to 20 minutes before eating. The purpose is to allow the garlic to fully oxidize and react with allinase in an aerobic environment to produce allicin. You don't need to eat a lot every day, three or five cloves are enough.
