Easy Sake Lees Miso Vegetable Hot Pot

Material

1500cc bonito broth or water, 180g sake lees, 2 tablespoons miso, 1 tablespoon mirin, assorted vegetables, mushrooms as needed

1. Pour sake lees and mirin into the broth and bring to a boil.

2. Add vegetables and mushrooms, cook until done, then add miso and enjoy.

Red wine beef brisket pot

Material

500g beef brisket, 20g celery, 30g onion, 1 tbsp olive oil, 30g carrot, 100g tomato, 200g potato, 300cc red wine, 1/2 tsp salt, 3000cc stock, 1/4 tsp thyme, 1 tbsp tomato paste

1. Pour olive oil into a stew pot, add beef brisket and fry until golden brown.

2. Add onion and celery and stir-fry until fragrant.

3. Add material B and all seasonings, bring to boil, then turn to low heat and cook for one hour.

Red wine and black bean dry pot crispy pork ribs

Material

500g spare ribs, red wine, cooking wine, soy sauce, salt, lemon, mushrooms, onion, ginger, garlic, chili, aniseed, cinnamon, bay leaves, nutmeg, cloves

1. Wash the ribs and add onion, ginger, garlic and lemon slices. Pour in an appropriate amount of red wine and marinate with cooking wine for about 1 hour

2. After marinating the ribs, blanch them in water and skim off the foam. Remove and drain

3. Pour water into the casserole. I added the broth from stewing pig's trotters the day before to make it taste more fragrant. Add the scallion segments. Then put the ribs into the casserole

4. Bring to a boil over high heat and add the spices in the seasoning packet.

5. After adding the dry ingredients, add the ginger slices

6. Add the chili peppers. If you don't have fresh chili peppers, you can use dried chili peppers.

7. Soak the dried mushrooms in water and put them into the casserole

8. Cover the lid and simmer over low heat, keeping the pot simmering for about 1 hour to 1.5 hours (the time depends on your needs, if you like it soft, you can simmer it for a little longer.)

Beer duck hotpot

Material

Ingredients: 1 fresh duck (about 1000 grams), 250 grams of beef tripe, 250 grams of pork slices, 150 grams of pork tripe, 1 can of luncheon meat, 250 grams of tofu skin, 250 grams of lettuce, 300 grams of green vegetables, 300 grams of lotus root, 350 grams of beer, 200 grams of vegetable oil (about 135 grams consumed), 100 grams of lard, 30 grams of bean paste, 30 grams of pickled ginger slices, 40 grams of pickled chili peppers, 10 cloves of garlic, 50 grams of old ginger, 15 grams of peppercorns, 25 grams of sugar, 10 grams of refined salt, 5 grams of MSG, 3 grams of pepper powder

1. Remove the duck's internal organs, claws, beak, and remaining hair, wash it, wipe it dry with gauze, put it in a pot of cold water and bring it to a boil, then simmer until it is 80% cooked, remove it from the water and chop it into 4 cm square pieces for later use. Clean the tripe and slice it into slices about 1.7 cm wide. Cut off the head of the pig's stomach, remove the belly skin, trim the fat tendons, wash it with clean water, make a cross-shaped cut, and then cut it into strips about 1.5 cm wide and 6 cm long. Cut luncheon meat and tofu skin into slices separately. Wash the greens, remove the old leaves and keep the tender leaves. Peel and clean the lotus root and lettuce, then cut into slices. Except for the duck, all the above ingredients are divided into two portions and placed symmetrically on plates around the hot pot.

2. Place another wok on the fire, heat the vegetable oil, add the pickled ginger slices, pickled chili peppers, bean paste, and old ginger (smashed) and stir-fry for a few times, drain off the remaining oil, add lard, garlic cloves, peppercorns, etc. and stir-fry for a few more times, pour in the duck soup, cook for 10 minutes, add the duck pieces, beer, sugar, salt, MSG, pepper powder, bring to a boil, and skim off the foam. Then scoop the soup and duck pieces into the hot pot and serve it on the table. Light the fire and cook while eating. You can eat all kinds of meat and vegetables at will.

Each person is given a sauce dish made with sesame oil, salt and MSG.
