Pork (100g), sweet potato jelly (400g), tofu (100g), scallion (1), 2 garlic cloves, 2 corianders, 2 chilies, 2 spoons of salt.

1. Prepare the ingredients: cut the pork into strips and mix with dark soy sauce, cut the tofu and jelly into cubes and set aside.

After soaking the rice, grind the rice and water into a thin rice paste for later use. Boil the fresh jelly grass and mash it, then put it into a gauze bag to squeeze out the gelatinous juice. Add the thin rice paste and the fresh jelly juice into the pot and boil them. Then stir with a spoon while mixing them. When it becomes a thin paste, pour it into a container. After it solidifies, place it in cold water to accelerate cooling.

Many families add sweet potato leaf juice to reduce the use of rice milk, save food, and make the jelly greener and crispier. Some people have continued to explore and added watermelon juice, apple juice or orange juice to make various fruit-flavored jelly.

4. Hot jelly

The seasoning for hot jelly is quite different from that for jelly. Prepare the seasoning soup in advance, boil the osmanthus, Sichuan pepper, pepper, etc. with water, then add oil, salt and a small amount of dry powder and cook into a thin paste. When eating, no salt, sauce or vinegar is needed. Just pour red chili oil and seasoning soup into the hot jelly bowl. It has a nice flavor and good color, and is economical and affordable.
