How to make watermelon wine

When making your own watermelon wine at home, you need to choose ripe fresh watermelons with high sugar content as raw materials. Wash them with clean water and remove the peel. Mash the pulp and take out the watermelon juice. Filter the watermelon juice and boil it to 70 degrees. Cool it down and set aside.

Use a straw to remove the clear liquid on the top of the watermelon juice, put it into a sterilized container, add an appropriate amount of white sugar so that the sugar content of the watermelon juice is about 20%, add 5% of distiller's yeast, and then add a small amount of sodium sulfate. This can effectively prevent the watermelon juice from deteriorating.

After mixing the watermelon juice evenly, place it in a warm place to ferment. After fifteen days, take out the upper clear liquid again, add sucrose, and after the sugar dissolves, put it into a pot and boil it. Filter it again and put it into a jar. At this time, the alcohol content of the watermelon wine is not high, so you can add a small amount of white wine and then seal the jar. After sixty days, the watermelon wine inside will be ready and can be taken out and bottled. After packaging, keep it in the refrigerator and take it out and drink it whenever you want.

1. Material selection

Choose fully ripe fresh watermelon with high sugar content as raw material.

2. Take the juice

First rinse the watermelon with clean water and drain it, then peel it and mash it to squeeze out the juice. Filter the squeezed watermelon juice with gauze, pour the filtered watermelon juice into a porcelain jar or aluminum pot, heat to 70-75 degrees Celsius, keep it for about 20 minutes and set aside. Note that melon juice cannot be stored or heated in an iron pot to avoid reactions that may affect the quality and color of the wine.

3. Allocation

After the watermelon juice has cooled and clarified, use a siphon to suck out the upper clarified liquid and put it into a sterilized porcelain jar or jar. First, use a handheld saccharimeter to measure the sugar content in the watermelon juice, add pure white sugar, adjust the sugar content of the watermelon juice to 20%~22%, and then add 3%~5% of distiller's yeast. To prevent rancidity, a small amount of sodium sulfate can be added, and the appropriate amount is 11 to 12 grams per 100 kg of watermelon juice.

4. Fermentation

After the prepared watermelon juice is fully stirred, it is placed in an environment of 25 to 28 degrees Celsius for alcohol fermentation. After 15 days, use a siphon to suck the juice into another jar or pot, and add sucrose at a rate of 10% of the melon juice. After the sucrose dissolves, pour it into a pot and boil it. After cooling, filter it with gauze and pour it into a jar. At this time, the alcohol content of the watermelon wine is not high, so you can add white wine to adjust it as required, and then seal the jar. After aging at room temperature for 60 days, it can be bottled and consumed. The longer it ages, the better the taste and quality.

5. Sterilization and storage

After the wine is put into clean bottles, it is capped with a simple bottle sealing machine and sterilized at 70 degrees Celsius for 10 to 15 minutes to become the finished product.

The optimum storage temperature for watermelon wine is 5 to 25 degrees Celsius, and it is best stored in a cool and dry place.
