It was previously rumored that sesame contains the highest amount of calcium and is more effective in supplementing calcium than milk! It is true that sesame contains high calcium, but it cannot be compared with milk because the calcium absorption rate in sesame is low, and sesame is an oil crop with extremely high calories, so the amount consumed each time is very limited! You can easily drink 500 grams of milk, while you can only eat 20 grams of sesame at most at a time, and babies can eat even less! So the calcium supplementation ability cannot be compared, but sesame paste has its own special features. 100 grams of sesame seeds contain 780 mg of calcium. If you eat 20 grams at a time, you can get 156 mg of calcium. Although it looks high, the absorption rate is low because the seed coat of the whole sesame seeds contains oxalic acid and phytic acid, which will affect the absorption of calcium! Moreover, the shell of the whole sesame seeds is very thick and difficult to digest, and basically "passes through the intestines" in the human body! However, if the sesame seeds are ground into sesame paste, it is no longer restricted by the sesame shell, then the overall absorption rate will be greatly improved, and the calcium absorption rate will also be improved! It is well deserved to say that sesame paste is a high-calcium delicacy. Sesame paste is also very suitable for babies. Since babies under 1 year old cannot eat salt, the taste of complementary food is very light. At this time, you can actually use some sesame paste for seasoning. Sesame paste not only tastes rich, but also can supplement calcium and iron. The ratio of calcium and magnesium in sesame is about 2:1, which is very suitable for calcium absorption. Many sesame pastes available on the market are not pure, and most of them contain peanuts. The biggest problem with peanuts is that they can be contaminated with aflatoxin if stored for a long time. 1. Choose good white sesame seeds. I used 300 grams for the first time. You can adjust the amount as you like. Of course, it would be better if you have fried cooked sesame seeds. You don’t need to wash or fry them.

2. Wash the sesame seeds with water. When soaking in water, some empty shells will float to the surface. Pour out the floating sesame seeds; drain the moisture from the sesame seeds (I let them air dry overnight and fried them the next day).

3. Fry sesame seeds. Stir-fry quickly over high heat, stirring constantly to prevent the bottom of the pan from getting burnt; if it is for adults, you can add pepper, star anise and other spices at this time, which will be very fragrant. You can also add salt, and the sesame paste made in this way will be very flavorful. However, this is for babies, so don't add anything else.

4. When the sesame seeds turn slightly yellow and become full and have a sesame aroma, you can turn off the heat. One or two minutes is enough. If you fry them for too long, they will become mushy.

5. After the sesame seeds have cooled, pour them into a food processor and blend them. Pause frequently while blending and do not blend for too long at a time to avoid overheating and jamming the machine.

6. After it is beaten into this powder, you can add oil. In this case, it is difficult to grind it into a finer state. After adding oil, continue to grind it and it will be finer.

7. Add tea oil, stir evenly, and continue beating until the sesame paste becomes smooth; you can stop and observe at any time until you are satisfied! In this way, the sesame paste is ready. Put it in a small glass bottle. It is not advisable to make too much at one time. Eat the prepared sesame paste as soon as possible. However, sesame paste has a longer shelf life than other foods. I suggest that it is best to eat it within one month. Usually, cover it and store it in the refrigerator and take it out when you want to eat it. It is generally recognized that sesame paste is delicious and can supplement calcium, but in fact, eating sesame paste has many other benefits: sesame paste is also a high-protein food. Every 100 grams of sesame paste contains 21 grams of protein, which is higher than eggs and lean beef. The iron content of sesame paste is also relatively high. Compared with sesame, these trace elements are better absorbed in sesame paste.
