Cooked crabs: Cooked crabs can be eaten overnight, but putting them in the refrigerator does not mean putting them in a safe. Cooked crabs that are stored for too long can still be a killer that easily causes poisoning. The principle is histidine. In leftover crabs overnight, histidine will be decomposed into histamine by some microorganisms. Although reheating can kill pathogenic microorganisms, it cannot destroy the toxins. Therefore, eating cooked river crabs that have been stored for too long may also cause histamine poisoning. So as soon as possible.

Short-term freezing will not kill you

Crabs are cold-blooded animals and will hibernate for self-protection when the temperature is low. If they are frozen for a short period of time, they will stay in the ice for less than 24 hours. Most hairy crabs will still be alive after thawing.

Long term freezing will kill you

After the crabs are frozen, if they are transported over long distances and stay in the ice for more than 48 hours, almost all of them will die. The cause of death is directly related to low temperature and lack of oxygen.
