Sugar color making method:

1: Heat the pot slightly, add a small amount of oil, turn to low heat (it is best for beginners to adjust to the lowest setting), add rock sugar, and start to boil;

2. When the rock sugar starts to melt, stir it slowly with a spatula, and be careful of oil splashing when boiling;

3. The rock sugar is completely melted and begins to show color, which is very obvious;

4: When it starts to bubble, you can put in the ingredients to be cooked! Be careful of the splashing oil when putting in the ingredients.

It can be boiled with carrot water. When we use carrots as fillings, we must first cut the carrots into shreds, then put them in water, boil them, and then remove them and drain them after they are cooked. The remaining water can continue to be boiled until it becomes a caramel-colored, sticky syrup, which becomes sugar color. If you need caramel color, for example, when making braised pork and applying a layer of caramel color on the skin, you can use this. The two most common methods of frying sugar color in life are frying in water and frying in oil, and each method has its own advantages. If you choose the water frying method, the ratio of sugar and water is the same. Put water in the pot first, and then put sugar in. Bring the water to a boil over high heat, then switch to low heat and simmer. This requires postgraduate students to have a good grasp of the heat. When the water is almost dried up, the sugar will start to color. At this time, we just need to stir it constantly with a spoon until the sugar turns into caramel color. After finishing, the sugar must be taken out of the pan immediately or added to the vegetables and stir-fried, otherwise the high temperature will easily make the sugar become mushy.

If you use the oil frying method, the oil only needs to be one-third of the sugar. Because the temperature of the oil is relatively high, oil frying is the fastest way to fry sugar color. Fried sugar color is more suitable for braised dishes. Generally, spices need to be added after frying the sugar color. At this time, because the oil temperature is high, the spices can easily become mushy. Therefore, it is best to pour a layer of cold oil on it before adding the small ingredients so that it will not get sticky easily.
